Spicy Egg And Baked Bean Curry

What You’ll Need

SERVES: 3 – 4 people
PREP TIME: 10 minutes
COOKING TIME: 20 minutes

  • 1 Tbsp. (15 ml) of Cooking Oil
  • 1 Onion, chopped
  • 1 Green Pepper, chopped
  • 2 Tomatoes, chopped
  • 1 Tin of Baked Beans in Tomato Sauce
  • ½ Cup (125 ml) of Water
  • 4 Eggs, boiled and peeled and cut into 4
  • Aromat Chilli Beef

 

How to do it

  1. In a pot, brown the onion and green pepper in oil until soft
  2. Add the tomatoes and fry for a further 2 minutes
  3. Add the baked beans and water and bring to the boil
  4. Turn down the heat and allow to simmer for 10 minutes, stirring occasionally
  5. Just before done add the eggs into the pot and simmer for a further 5 minutes
  6. Divide the curry between four plates and season generously with Aromat Chilli Beef and serve with rice or pap.
